Mimolette 12 Month

12-month Mimolette is a French cheese, specifically an Isigny Sainte-Mère Mimolette, aged for 12 months. It's known for its semi-hard, pressed texture, vibrant orange color (from annatto coloring), and a rich, nutty flavor that becomes more pronounced with age.  Mimolette pairs well with various items like charcuterie, honey, and whole grain mustard. It can also be grated or shaved for use in recipes.
